Citrus Salad

Who say’s your salads have to be green?   This easy-to-follow Citrus salad with Honey lime dressing is perfect for a hot summer day.  I have to admit although I like to cook, I am mostly too lazy to prepare a hearty salad somedays but this one is so simple to make that it hardly any work at all.   Citrus, in all its sweet and sour goodness, is the perfect summer salad mix-in!  Just a few slices will wake up your salad and provide a bright burst of colour.

Plus, Do you really want  to heat up your kitchen when you could be outside sitting sipping strawberry lemonade ?  I didn’t think so.  

Here’s how we made our citrus salad.

Combine fruit and red onion in a large shallow bowl & Cover and chill until serving time.
Citrus Salad Ingredients

Whisk together olive oil, honey, lime juice and salt until well combine. Taste, adjust seasoning as needed. Cover and chill until ready to serve.
Citrus Salad Dressing

Drizzle the honey-lime dressing over the fruit and enjoy!

Ingredients
  1. 2 pink grapefruit
  2. 2 navel oranges
  3. 2 clementines
  4. 1/4 red onion - diced
  5. 3 Tablespoons olive oil
  6. 2 Tablespoons honey
  7. 2 Tablespoons fresh lime juice
  8. 1/4 teaspoon kosher salt
  9. Mint to garnish
Instructions
  1. Peel citrus, removing as much pith as possible.
  2. Cut between the membranes to release segments.
  3. Combine fruit in a large shallow bowl & Cover and chill until serving time.
  4. Dice red onions and keep wrapped and chilled until serving time (separate from fruit).
  5. Whisk together olive oil, honey, lime juice and salt until well combine. Taste, adjust seasoning as needed. Cover and chill until ready to serve.
  6. Right before serving, add the onions to the serving bowl and drizzle the honey-lime dressing over the citrus salad and gently toss.
  7. ENJOY!!

    Oh my goodness yum!!! I wonder if adding feta would work? I LOVE adding feta cheese to all of my salads! This is definitely a great summer salad!

    My SO is HUGE for citrus fruits. He actually made something similar not too long ago but he added WAY too many limes and it was too sour lol He also didn’t add honey either! Next time will tell him to add honey!

    Honey Mustard dressing is my fav so this dressing sounds really good and simple to make. I love a light salad, especially for summer.

    How simple is that? This would go perfect mixed in with the kale/cranberry salad I make. Grapefruit always adds that perfect sour note to salads.

      It’s really delicious! Perfect for pairing with chicken or fish. We don’t eat a lot of red meat but this salad would be a great side for a steak.
